I know you asked this question about 6 months ago, but whatever. If I’m not mistaken by what you mean my template, you mean you would like prebuilt models. The most used addon is MCPrep (https://theduckcow.com/dev/blender/mcprep/) To simply change the texture click on the mesh and go into shaders. There should be an image texture node and in there you can choose your dedicated texture image.
