When i click on a texture i want to edit that has a similar name to another texture it will load in the texture for the one i want to edit but then open up a model for editing it as something else.

I think it may be caused by them both having the same name up in the address bar. You can see at the top of the screen shot where it says
“https://minecraft.novaskin.me/resourcepacks#default/textures/gui/container/villager.png”
Maybe the “/villager.png” is telling it to use the villager model instead of using the villager gui model.
you can still download the vanilla gui model, and then editing it on ohotoshop or something, if you try to edit it in paint, you will have several problems with the backgrowund (paint replaces it with white color)
